Thanksgiving was quiet and intimate with a small group of family.
When most spend their time cooking since the night before, I don't like wasting precious time.
Every year, the menu is always easy to make and not time consuming: Roast Beef, Green Bean Casserole and Roasted Garlic Mashed Potatoes. The difference every year is how the roast beef is seasoned.
This year, I found a recipe online that asked for various veggies and herbs to be laid on the roasting pan jist right underneath the beef. Though the beef was seasoned with a special rub and some fresh garlic, the aroma of the herbs and veggies roasting underneath added a burst of flavor in our Roasted Thanksgiving.
I just need to remember not to over-bake nor over-cook the side dishes.
